Mother’s Day baking perhaps?! ❤️ give it a whirl, we will be ❤️ 

Super High-Fiber Chocolate Banana Bread (GF/DF/No Added Sweeteners)

Ingredients:

  • 3 very ripe bananas (approximately 300g peeled)

  • 80g coconut oil, melted

  • 2 eggs

  • 5ml (1 teaspoon) vanilla extract

  • 80g coconut flour

  • 30g unsweetened cacao powder

  • 40g ground flaxseed

  • 10g psyllium husk powder

  • 5g (1 teaspoon) baking soda

  • 3g (1/2 teaspoon) salt

  • 3g (1 teaspoon) cinnamon

  • 120-180ml (8-12 tablespoons) almond milk or oat milk

Preheat your oven to 175°C and line a loaf pan with parchment paper.

In a large bowl, mash the bananas until smooth.

Add the melted coconut oil, eggs, and vanilla extract. Mix well.

In a separate bowl, combine the coconut flour, cacao powder, ground flaxseed, psyllium husk powder, baking soda, salt, and cinnamon.

Gradually add the dry ingredients to the wet ingredients and stir until combined.

Add the plant milk gradually, starting with 120ml (8 tablespoons) and adding more as needed. The batter should be thick but still able to be poured/spread into the pan!

Heyyy Rose - here’s one I struggle with sometimes, perhaps others too. Fluoride vs normal paste? I saw this and it triggered me whether change in paste offers better gut health or is it bonkers? Hey Rose. I checked into your whole foods checkin, thank you so much for answering my Q’s on fasting / cycles and Magnesium - super helpful. I did pick up on your term seed cycling, I see a lot of noise about it on Insta too. Pumpkin seeds / sunflower seeds + flaxseed are semi always part of my one a day of late. Ought we be concerned with seed cycling … as in, it it for everyone or just if you get really hormonal? Just curious xx

Recipe I used today from another follower on Insta (Madeline Shaw) - turned out epic ❤️

Lunch: Miso Tofu Bowl with Pickled Veg & Sesame

(38g protein, 10g fibre)

serves 1

Umami-rich with gut-loving fermented miso.

✨ Ingredients:

  • 1/2 block of tofu (baked with miso glaze)

  • 100g edamame

  • 1 tbsp white miso paste

  • 1 tsp of minced ginger

  • 1 tsp of minced garlic

  • 1 tbsp tamari

  • 1 tbsp sesame oil

  • 1/2 lime, juiced

  • ½ cup shredded red cabbage or shredded lettuce

  • 1/4 small cucumber, ribboned

  • 2 tbsp picked onion or radish

  • 1 tbsp sesame seeds

  • to serve - sriracha, sesame oil, chilli flakes

🍜 Method:

  • Roast tofu with a miso glaze (miso, tamari, ginger, garlic, sesame oil) at 180°C for 12-15 mins. Pour lime over the top to deglaze the roasting tin.

  • Steam the edamame.

  • Assemble in a bowl with cabbage/lettuce, cucumber, radish/onion, and sesame seeds. Toss with the miso dressing tofu.

With so much conflicting advice, I’m so excited to hear Rose’s view on protein, how much we need etc … I follow Tim, interesting reel but just not 100% convinced as I’ve always been a protein first type person?!
