Mita Davda really good questions! Quick thoughts:

Coffee: Our natural cortisol is high in the morning, so coffee then isn’t always as helpful. After lunch when cortisol dips, a coffee can feel more supportive. Just watch sleep sensitivity later in the day!

Oxalates: Honestly, for the vast majority of people, foods like spinach are hugely beneficial — packed with nutrients. In functional medicine, oxalates are seen as a mild hormetic stressor — a little “good stress” that can support resilience. Only a small subset of people with gut or detox issues need to be more careful. No need to fear them otherwise and if you really are worried cooking reduces them greatly Hope that helps! xxx
