Hi Helen, I'm glad you're excited about the January plan! For a soy-free alternative to miso soup that avoids added sugars and other undesirable ingredients, you might consider a chickpea miso, which is made from fermented chickpeas instead of soybeans. It offers a similar umami flavour profile without the soy. Another option is a simple vegetable broth enriched with nutritional yeast for a boost of umami flavour. You can also add seaweed, mushrooms, or herbs like thyme and bay leaf to deepen the flavour without needing miso.
